Food Trip: Bamboo shoots with crab and saluyot in coconut milk.

It been my first time to cook bamboo shoots that is not already shredded, that’s why I don’t know what to do, usually I bought it already shredded, but now its actually a bamboo shoot, my wife went to province and she had brought two pieces of bamboo shoots, I was hesitate to cook it because I don’t know to do it, some say, that if it not properly cut it became sour, so,  I tried to cut it on my own, but my wife stop me,

She said its not like that, she gave me a shredder, so, I shred it, my problem solve, then its turn to cook it,  bamboo shoots in coconut milk with crabs and saluyut a leaves that produce glid broth when it cook.

 

The ingredient,

 

  • Bamboo shoot (shredded or cut in small and thin). 

  • Oil, garlic, onion, tomatoes, salt to taste,  

  • One coconut milk, 

  • Saluyot (Egyptian spinach) or (Corchorus olitorius) 

  • Okra, water of coconut milk (2nd milk/squeeze) for soup and green chili.

     

    Here is how

     


    Cook crabs in a little water, enough for the amount of crab and suite garlic, tomatoes and onion, in a separate cooking pot, cook until they become tender, then put the bamboo shoots together with tomatoes, onion and garlic. Steer the bamboo shoot to mix in, and then put the suited bamboo shoot tomatoes garlic and onion together with a crabs. Then put the coconut milk then okra spicy and taste it. cook until the coconut milk has done, then put the saluyot, after a minutes, its... ready to serve with rice, if you want it dry or soup style  its up to you, as well as, the taste of coconut milk is still there.

     

    We know that, tomatoes, onion, garlic, coconut milk okra and crab has a nutritional benefit in our body, bamboo shoot and saluyot that ordinarily found in our backyard has too.

 

Saluyot Leaves

 

Saluyot leaves  are very nutritious; it is rich in calcium, iron, protein, vitamin A, C and E, thiamin, riboflavin, niacin, folate, and dietary fibers. Saluyot is usually cooked as stew, forming thick slimy syrup similar in consistency to okra usually taken with rice or other starchy staple.

 

Saluyot are rich in vitamins and minerals generally promotes good health and well-being.

 

  • Rich in vitamin A can provide health benefits for good eyesight.

  • Contains vitamin E and other antioxidants. It is said to prevent wrinkles and promote youthful looking skin.

  • Treat inflammation and pain such as arthritis, headache, stomach ache and others.

  • Rich in fiber helps to control blood pressure, cholesterol build-up, diabetes and prevents heart disease.

  • When cooked is used to treat various digestive problems such as diarrhea, stomach ache, dysentery, constipation and ulcers.

  • Aside from health benefits you can dried it leaves and boiled to make a medicinal tea.

 

Saluyot leaves being a vegetable can be thrown in as an ingredient in making stews or soups and other viands. The Ilocano’s are known to prepare delicious dishes with saluyot; the most popular are dinengdeng and bulang-bulang. Some Ilocano’s even attributes their youthful looks and longevity in saluyot rich diet.

 

The main nutrients in bamboo shoots are protein, amino acid, fat, sugar and inorganic salt. They are rich in protein, containing between 1.49 and 4.04 grams (average 2.65g) per 100g of fresh bamboo shoots. The bamboo protein produces eight essential and two semi-essential amino acids. Although the fat content is comparatively low (0.26-0.94%), it is still higher than in many other vegetables, and the shoots contain rich essential fatty acids. The total sugar content, 2.5% on average, is lower than that in other vegetables. The water content is 90% or more.

If you didn’t know how to prepare bamboo shoots better to buy in can or those prepared already and ready to cook but if you're able to find fresh bamboo shoots in your backyard, they're usually prepared by boiling for twenty to thirty minutes in salted water. It's critical that they be boiled for this length of time since this helps to remove their cyanogenic glycosides which can be toxic. It also helps to eliminate the natural bitterness they have when raw.
